Ingredients

  • 1.5 cups hazelnut flour
  • 1/2 cup kerry gold butter
  • 1/4 tsp himalayan salt
  • 1/2 tsp xanthum gum
  • 1/2 tsp baking powder
  • 1/2 cup swerve
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 2/3 cup lily's chocolate chip

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the butter, vanilla, sweetener, baking powder, xanthan gum, and salt until smooth.
  • Slowly add the hazelnut flour and stir until a dough forms.
  • Fold in the chocolate chips until evenly distributed.
  • Using a spoon or cookie scoop, form small round dough balls and place them on the prepared baking sheet.
  • Bake for 11–13 minutes, or until the edges are lightly golden.
  • Cool for a few minutes before serving. Enjoy!

Notes

Adjust the sweetener to your taste. I prefer a gentle sweetness, so my recipes are usually mildly sweet rather than overly sugary.
