Ingredients
  

Dry Ingredients
  • 3/4 cup almond flour blanched
  • 3/4 cup cassava flour
  • 1/2 cup tapioca powder
  • 1/4 tsp Himalayan salt
  • 1/2 tsp cinnamon
  • 1 tbsp Brown Swerve
  • 8 tbsp Kerrygold salted butter, cold
Wet Ingredients
  • 4 tbsp ice water
  • 1 large egg room temperature
Filling
  • 4 medium Apples Granny Smith
  • 1 tbsp vanilla extract
  • 1/2 cup Brown Swerve
  • 1 tbsp lemon juice (or juice of 1/2 small lemon)
  • 1/8 tsp cardamom powder

Method
 

  1. Prepare a cookie sheet or wide baking tray.
  2. Mix all dry ingredients in a bowl. Cut in the butter until crumbly, then add ice water 1 tbsp at a time until dough forms.
  3. Place dough between two parchment papers and roll into a 10–12" circle. Refrigerate for 1 hour.
  4. While crust chills, peel, core, and thinly slice apples. Mix with filling ingredients and set aside.
  5. Remove dough from fridge. Place on baking sheet, carefully peeling off parchment.
  6. Preheat oven to 375°F.
  7. Arrange apple slices in concentric circles on the dough, leaving 1–1.5" edge. Pour any extra juices over apples.
  8. Fold edges of dough over apples. Brush with egg wash and sprinkle with a little Brown Swerve.
  9. Bake for 40–45 minutes until crust is golden brown.
  10. Cool 10–15 minutes before slicing into 8 pieces. Serve warm.
