  • 1 1/3 cup Almond flour blanched
  • 1 tsp Pumpkin spice
  • 1/4 tsp Himalayan salt
  • 1 1/2 cup Brown Swerve (or substitute ¾ cup sugar)
Wet Ingredients
  • 9 tbsp Kerrygold salted butter
  • 3/4 cup Pumpkin puree organic
  • 3 large eggs room temperature
  • 1 tbsp vanilla extract
Toppings
  • 4 squares (85% cacao) Lindt chocolate, melted for drizzle
  • 1/2 cup Pumpkin seeds

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8×8-inch baking pan with parchment paper and lightly coat with cooking spray.
  3. In a medium bowl, whisk together the dry ingredients until well combined.
  4. In a separate bowl, whisk the wet ingredients until smooth.
  5. Add the wet ingredients to the dry ingredients and stir until a smooth batter forms.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and allow the brownies to cool in the pan for at least 15 minutes.
  9. Melt the chocolate squares and drizzle over the cooled brownies.
  10. Sprinkle pumpkin seeds on top and add an extra drizzle of chocolate if desired.
  11. Slice and enjoy.
